3 c. SR flour
1 t. cinnamon
2 c. sugar
1 c. oil
1 1/2 t. vanilla
3 eggs
3 bananas, diced (may substitute applesauce instead, about 1 3/4 c.)
8 oz. crushed pineapple
Preheat oven to 350. Spray 9x13 pan. Sift together dry ingredients. Add undrained pineapple, oil, vanilla, eggs, and bananas. Mix until blended. Do not beat! Bake for 1 hour 20 minutes. Let cool in pan for 20 minutes before removing. (or leave in pan if desired)
*This cake is a lot like another recipe I have on the blog for Hummingbird Cake. Hummingbird cake has a cream cheese icing with chopped pecans.
In Jamaica, Hummingbirds are the national bird and they are called Dr. Birds. Hence the name of this cake!
