2 c. fresh corn, cut off cob (about 4 medium)
1 c. chopped onion
2 t. salt
1 c. SR (yellow or white) corn meal
1/2 c. water
1 c. fresh tomatoes, chopped
1 c. chopped green pepper
1/8 t. cayenne pepper
1 c. grated cheddar cheese
2 eggs
1/2 c. evaporated milk
Mix together all ingredients except eggs, milk, and water. Let mixture set for 30 minutes. Add milk, eggs, and water. Mix well. Pour into sprayed 2 qt casserole. Bake at 375 for 1 hour. Serve hot or cold.
