1 1/2 c. oil
3 eggs
3 c. plain flour
1 t. salt
1/2 t. nutmeg
1 c. chopped pecans
1/2 c. golden raisins
2 c. sugar
2 t. vanilla
1 t. soda
1/2 t. cinnamon
2 c. finely chopped, peeled, cored apples
Beat oil, sugar, eggs, and vanilla until well blended. Combine dry ingredients. Add to sugar mixture. Beat well. Stir in apples, nuts and raisins. Spoon batter into a greased and floured bundt or tube pan. Bake at 325 for 1 hour 15 minutes, or until cake is done. Let cake cool in pan 10 minutes before inverting onto plate.
