Apple Raisin Coffee Cake

1 pkg. white or spice cake mix*

1/2 t. nutmeg

1/4 c. oil

1 1/2 c. peeled, cored, sliced and chopped apples

1/3 c. packed light brown sugar

2 t. cinnamon, divided

1 1/4 c. water

2 eggs

1/2 c. raisins

1/2 c. plain flour

1/4 c. butter

Preheat oven to 350. Lightly spray 9x13 dish. Combine cake mix, 1 t. cinnamon, and nutmeg until well blended. Whisk in water, oil, & eggs, until mixture is smooth. Stir in apples and raisins and pour in prepared dish. Combine flour, brown sugar, butter, and 1 t. cinnamon. Mix with pastry blender until crumbs form. Sprinkle over batter. Bake 35-40 minutes or until toothpick comes out clean. Allow to cool completely on wire rack. May be frosted if desired.

*cake mixes used to be 18 oz, but are now 15 oz. To remedy this, add 2/3 c. white or yellow cake mix to recipe.

Optional Frosting:

1 box confectioners sugar

1 stick butter, softened

1 t. vanilla

8 oz. cream cheese, softened

a little milk

Combine all ingredients until desired consistency is reached and spread on cooled cake.
