Mexican Roll-Ups

1 1/2 c. cooked chicken, bite size pieces

1 garlic clove, minced

16 oz. can refried beans

1 T. cilantro

10-12 flour tortillas

1-2 T. chopped jalapeno peppers, optional

2 T. salsa

2 T. chopped onion

1/2 t. cumin

1 c. shredded cheddar cheese

sour cream

Combine peppers, salsa, garlic, onion, beans, cumin, cilantro, and 1/2 c. cheese until smooth. Fold in chicken. Spoon mixture into one side of tortillas. Roll up and place on 9x13 dish. Cover and bake at 350 for 20 minutes, or until heated through. Sprinkle remaining cheese on top and let stand until melted. Serve with sour cream and salsa.
