Tiny Orange Cakes

1 yellow cake mix + 2/3 c. cake mix*

strained juice of 2 lemons

strained juice of 2 oranges

1 1/2 lbs. confectioners sugar

grated rind of 2 lemons

grated rind of 2 oranges

Mix cake mix (& extra mix) as directed, except omit 3 T. water. Drop by teaspoon into greased and floured miniature muffin/cupcake tins. Bake at 375 for 10-12 minutes. Combine remaining ingredients thoroughly. Remove cakes and drop into mixture immediately. When cakes are coated, remove with slotted spoon and place on wax paper to dry. Makes 4-5 dozen. 

*Cake mixes used to be 18 oz. Now they are 15 oz and the additional 2/3 c. mix added solves the problem.
