Cookie Bars

1 3/4 c. self-rising flour
3/4 c. sugar/splenda
1/2 c. brown sugar, firmly packed
3/4 c. peanut butter
1/4 c. crushed pineapple, drained
2 T. margarine
1 t. vanilla
1 egg
1 1/4 c. white chocolate chips
1/2 c. coconut flakes

In large bowl, cream together sugars, peanut butter, pineapple, margarine, and vanilla. Beat in egg. Gradually add flour, until completely combined. Fold in 1 c. white chips. Press dough into greased 9x13 dish. Sprinkle with remaining chips and press down lightly. Bake at 350 degrees for 22-25 minutes, until toothpick comes out clean. Put baking rack in middle and turn oven to broil. Sprinkle coconut on top of the bars. Broil for 30-60 seconds, until coconut is browned. Do not burn the coconut! Cool completely and cut into bars.
