Crockpot Zucchini Ziti

1 large jar marinara
3 c. penne shells, dry
2 c. cottage cheese
2 c. shredded mozzarella cheese
1 large zucchini, sliced
1 T. fresh oregano, chopped
1 T. fresh basil, chopped
1/4 t. pepper

Combine cottage cheese, mozzarella, basil, oregano, and pepper. Spoon 1/4 of marinara sauce in bottom of sprayed or lined crockpot.. Add 1 c. penne shells & 1/3 zucchini slices. Top with cheese mixture. Repeat until you have 3 layers. Top with remaining marinara and cheese. Keep penne & cheese away from edges. (Pasta gets hard and cheese burns) Cover and cook on low for 2 hours until penne is done (firm, but not hard) Cool 15 minutes. Serve with chicken if desired. Yum!
