Garden Zucchini Pie

3/4 c. Bisquick
2 c. sliced and quartered zucchini
1 1/2 c. milk
1/4 t. pepper
3 eggs
1/2 c. Parmesan cheese, grated
1/2 c. chopped onion, optional
1 1/2 c. diced tomatoes
1/2 c. diced green pepper, optional
1/4 t. salt

Heat oven to 400 degrees. Spray deep dish pie plate. Place vegetables in bottom. Dust with salt, pepper, and Parmesan. Beat eggs, milk, and bisquick until smooth. Pour over vegetables. Bake at 400 degrees for 30 minutes. Cool 5 minutes. Serve.
