3 c. SR flour
2 c. sugar
1 t. cinnamon
3 eggs
1 1/4 c. oil
dash pineapple extract
2 t. vanilla
8 oz. crushed pineapple, drained
2 c. mashed bananas
1/2 c. coconut, (optional)
Combine flour, sugar and cinnamon. Beat eggs, oil, and vanilla together. Add pineapple and bananas. Add to flour mixture. Pour into 2 sprayed loaf pans. Bake at 350 degrees for 60-65 minutes. Cool 10 minutes before removing from pans. YUM!
