Watergate Salad

3.5 oz. pkg. pistachio instant pudding mix
16 oz. can crushed pineapple, drained, reserve juice
16 oz. can fruit cocktail, or very cherry, drained
1/4 c. pecans, chopped, optional
16 oz. whipped topping, thawed
1 c. miniature marshmallows

Combine pudding mix with reserved pineapple juice. Stir in remaining ingredients. Garnish with pecans and maraschino cherries, if desired. Using red and green maraschino cherries at Christmas makes a festive salad. (Place a red cherry in the middle of 4 green cherries that have been quartered to resemble leaves. This looks like a holly berry and leaves.) Refrigerate.

*This salad is best if made a day ahead to allow flavors to meld.
