Watergate Salad

3.5 oz. pkg. pistachio instant pudding mix
16 oz. can crushed pineapple, drained, reserve juice
16 oz. can fruit cocktail, or very cherry, drained
1/4 c. pecans, chopped, optional
16 oz. whipped topping, thawed
1 c. miniature marshmallows
maraschino cherries*, optional for garnish

Combine pudding mix with reserved pineapple juice. Stir in remaining ingredients. Garnish with pecans and maraschino cherries, if desired. Using red and green maraschino cherries at Christmas makes a festive salad. (*Place a red cherry in the middle of 4 green cherries that have been quartered to resemble leaves. This looks like a holly berry and leaves.) Refrigerate.

*This salad is best if made a day ahead to allow flavors to meld.
