1/4 c. oil
2 medium boiling potatoes, peeled and diced
1 c. carrots, peeled and diced
3/4 c. minced onions
5 1/2 qts chicken stock
2 T. basil, minced
1 t. oregano, minced
3 c. diced zucchini
3 c. peeled, seeded, and diced tomatoes
2 c. peas
1 lb alphabet pasta
Place all ingredients except pasta in crockpot. Cook on low 2-3 hours. Add pasta til cooked through. Season with salt and pepper. Serve with fresh parmesan. Makes 16 cups.
