Pumpkin & Cranberry Topping

6 c. uncooked pumpkin
2 t. pumpkin pie spice
1 c. 100% orange juice
1 t. vanilla
1/3 c. honey + 2 T. honey
1 c. fresh cranberries, diced
1/2 t. cinnamon
1/3 c. pecans, diced

Using an 8-10" pumpkin, slice open, remove seeds, strings, and cut pumpkin away from peeling. Cut into 1" chunkc. Place in sprayed crockpot. Add pumpkin pie spice, orange juice, 1/3 c. honey, and vanilla. Stir. Be sure to cover the pumpkin. Cover and cook on low 4-5 hours. Serve as an ice cream or oatmeal topping or eat by itself. Enjoy!
